Aveze
Avèze has been produced since the 1920s in the Cantal region of Auvergne, France, where gentian root grows abundantly in the volcanic soil of the Massif Central. The liqueur is built on hand-harvested gentian, a plant prized for centuries for its medicinal and digestive qualities. Created as a regional specialty, Avèze helped popularize gentian apéritifs throughout France, embodying the bitter alpine tradition while offering a slightly softer and more approachable expression compared to its cousins Suze or Salers. Today it remains a staple in the French apéritif canon, often served chilled or with tonic to highlight its mountain origins.
Tasting Notes
Pale gold in color, Avèze opens with earthy aromas of roots and meadow herbs touched by citrus peel. The palate is bittersweet and clean, dominated by gentian’s distinctive earthy-bitter grip balanced by subtle floral and lemon notes. The finish is refreshing, long, and slightly woody, leaving a lingering echo of alpine herbs.
