Introduced in 1980 by Dewazakura Sake Brewery of Yamagata Prefecture, this Ginjo sake is credited with popularizing ginjo-style sake and launching the “Ginjo boom.” Brewed from Dewasansan and Haenuki rice polished to around 50%, and fermented with Ogawa yeast using the sokujo method, Oka embodies floral elegance in every sip.

It opens with an expressive bouquet of cherry blossoms, rose water, honeysuckle, and violet—floral but never heavy. Subtle layers of peach, pear, melon, and cherry blossom sweetness emerge gracefully. On the palate, it starts dry, giving way to a soft, creamy texture rich with dried-fruit warmth and a delicate melon finish. Lightweight yet nuanced, with a refreshing smack of acidity, Oka shines in its clarity and refined finesse—truly a spring in a glass.
