François Le Saint Sancerre “Silex” 2023 is a classic Loire Valley Sauvignon Blanc, made from 35-year-old vines rooted in clay, marl, and flinty (“Silex”) soils. Produced by the historic Domaine Fouassier (est. 1749), it’s certified organic and biodynamic, fermented with native yeasts, and aged on the lees in stainless steel before bottling with minimal sulfur.

Bright and taut, this energetic wine opens with citrus blossom, grapefruit zest and a hint of lychee on the nose. On the palate, crushed stone and green fig meet lemon pith and grapefruit peel, all wrapped in a light lees creaminess that adds texture without softening the chalky minerality.
