A 100% Catarratto Bianco Lucido from northwestern Sicily’s Monte Bonifato, where organic vineyards sit at 650 m on limestone-rich slopes. Hand-harvested and cold-fermented, then aged on the lees for four months in concrete tanks. Certified organic, this bottling emphasizes purity and terroir in a fresh, textural style. 

Tasting Notes
Pale straw in the glass with delicate mineral lift. The nose offers bright citrus and white stone fruit, with a hint of crushed herbs. The palate is crisp yet rounded—think juicy acidity, lemon pith, wet stone, and a whisper of saline energy that carries into a clean, refreshing finish.

Food Pairing
Pair it with citrus-marinated grilled shrimp—its zippy acidity and minerality mirror the seafood’s freshness and cleanse the palate. Also delicious alongside grilled zucchini ribbons tossed with herby goat cheese: rounded and bright, the wine lifts the creamy texture with ease.
