From Domaine du Bel Air in the Bourgueil appellation (Loire, France), this is the “everyday” Cabernet Franc by Pierre & Rodolphe Gauthier. The domaine is organically farmed, and “Jour de Soif” is made with lighter intervention: destemmed fruit, native yeast fermentation, and aging in stainless steel (i.e. minimal oak influence).

Tasting Notes
Pours a clear, bright red. On the nose: juicy red cherry, raspberry, wild strawberry, touched with crushed herbs, pepper, and subtle leafy notes. On the palate it’s light-to-medium in weight, with vibrant acidity, soft tannins, and a clean, mineral-tinged finish. It’s fresh, energetic, and expressive.

Food Pairing
Great with herby lamb meatballs or grilled pork chops — the wine’s red fruit and herbal edge accentuate seasonings without overpowering the dish. For a fun twist, pair it with a rustic tomato-herb flatbread topped with fresh mozzarella, basil, and a drizzle of olive oil.
