Crafted by Pedro Rodríguez of Adegas Guímaro, this wine is a blend of Mencía and other indigenous varieties, sourced from multiple high-elevation vineyards with an average vine age of 40 years. The grapes are hand-harvested and fermented with a significant portion of whole clusters, using native yeasts, and aged in a combination of old French oak vats and barrels. Bottled unfined and unfiltered, it reflects the rugged beauty of Ribeira Sacra's terraced slopes.

Tasting Notes:

This wine offers a vibrant bouquet of wild red and black fruits, violets, and subtle earthy tones, layered with an intriguing minerality that reflects the slate-rich soils. The palate is juicy and velvety, with flavors of dark cherry, raspberry, and a touch of spice, underpinned by fine-grained tannins and lively acidity. The finish is long, showcasing the wine’s elegance and its seamless integration of fruit, earth, and oak.

Food Pairing:

This versatile wine pairs beautifully with roast white meats, meaty fish, and dishes featuring red sauces. For a playful twist, try it with a classic Spanish tortilla or a hearty mushroom risotto—the wine's acidity and spice complement these flavors beautifully.
