The grapes are fermented on their skins for three weeks in a combination of stainless steel tanks and amphorae, with gentle cap management by hand. Post-fermentation, the wine is racked into a mix of neutral barrels and stainless tanks, allowing for natural cold stabilization during the region's cold winters.
