This is Michel’s standout white wine, and it’s something special. Made from a rare local version of Chardonnay called Melon à Queue Rouge, this wine comes from blue marl soils and is aged for four years in barrels without being topped up—giving it that signature voile (a layer of yeast, like in sherry).

The result? A wine that’s salty, rich, and layered, but still super refined and focused. It’s like wild energy wrapped in elegance. Even older bottles Michel has shared over the years have been mind-blowingly good. Pair it with Comté cheese (classic Jura pairing!), roasted chicken, or lemon butter scallops on a hot day.
